Hot Chocolate Rice Krispy Treats

Um, is it freezing where you guys are? Because it's freezing here. No, like literally, I am freezing. I take out our trash and I can't feel my toes kind of cold. My children have forgotten what the outside world looks like it's been so long since we've left the house. I don't look at my electricity bill anymore.

Let's be honest though, I'm a California girl. Growing up I though winter ended when we took our Christmas tree down. What do you mean winter lasts through March!?!

Needless to say living in Washington D.C. has given me a new taste of winter. And I know I'm totally being a baby and there's some of you who live in like North Dakota where it's waaaay worse. So I'll suck it up and stop complaining. Maybe. 

At any rate we've been drinking a lot of hot chocolate over here. Like A Lot. I figured I'd better find another use for the stuff so I can pretend that I didn't go through the whole Costco size canister by myself. Ahem.

So, alas, Hot Chocolate Rice Krispy Treats of course!

The base of these are of course cocoa krispies, but then the chocolatiness is seriously upped by using the hot chocolate mix. And what would hot chocolate be without those tiny little marshmallows that I can eat all in one sitting? Perfection! So go whip out a batch of these babies. And from experience, these are best when eaten with a cup of steaming hot chocolate. While sitting in front of your space heater.

Hot Chocolate Rice Krispy Treats


6 Tbsp butter
6 cups marshmallows
1/2 cup your favorite hot chocolate mix
1 tsp vanilla extract
6 cups cocoa krispies
3/4 cup Marshmallow Bits


Pour the cocoa krispies and Marshmallow Bits in a bowl and set aside. Melt the butter in a saucepan over medium heat. Once melted, turn the heat down to low and add the marshmallows. Continuing stirring until mostly all melted, then add in the dry hot chocolate mix and vanilla extract.


Once fully melted, take off heat and pour over the cocoa krispies. Stir lightly to combine. Dump into a lightly greased 9x9 pan and let sit 5 minutes. Then go and light press into the pan with greased hands. Allow to fully set about 20 minutes then enjoy!
